Recently, there are some kinds of the noodles such as thin one, raw one and noodles including citrus powder etc. |

Taste Iya buckwheat near Kazura Bridge
 | | Iya buckwheat is made from pure water from Iya and buckwheat powder produced near here. Buckwheat powder is harvested in the narrow field around Iya River which is a branch of Yoshino River, flowing in the steep mountains in Shikoku. The characteristic of the noodle is that its length is shorter than that of normal noodle and to use buckwheat more. The noodle is cooked with soup which is made of the stock from small fish and leek. The noodle is easily cut because liaison is not enough. |
